Peanut Butter–Strawberry Oatmeal

Yield: 1 serving

  • ½ cup dry oats (cooked)
  • 1 Tbsp peanut butter
  • ½ cup sliced strawberries
  • 1 tsp sugar

Method

  • Toss cooked oats with peanut butter, strawberries and sugar.

  • 12 ounces dried apricots, chopped
  • 1/2 cup wheat germ
  • 2 cups unsalted, roasted peanuts
  • 1 cup raisins

Method

  • Mix all ingredients and store in an air-tight container.

Peanut Banana Bread

  • Crunchy natural peanut butter
  • 2 Ripe bananas

Method

In a large bowl, cream together with Crunchy peanut butter and sugar to a mixer. Add eggs, lemon extract and bananas. Mix well. Sift together flours, baking powder and salt. Gradually add to banana mixture. Fold in the peanut butter and add chocolate chips. Pour into a greased 8 1/2-inch by 4 1/2-inch loaf pan. Bake in a 350 degree oven for 1 hour or until done.
